What a Wonderful Smell

One of the most wonderful smells is bread baking. It’s that soft, warm, comforting smell and you can’t wait to try it as soon as it’s done. Banana bread is no exception. There are not many things better that a warm slice of banana bread with butter and a hot cup of tea or coffee in the morning for breakfast. As much as I love bananas, I thought I would add a few extra ingredients to make my banana bread more like a dessert. It still needs some tweaking so if you have any suggestions, please feel free to share them with me. Here is my first attempt at Banana Bread:

Chocolate Chip Banana Bread

2 c. all-purpose flour
1 t. baking soda
¼ t. salt
½ t. nutmeg
½ t. cinnamon
½ c. butter (room temperature)
¾ c. brown sugar
2 eggs beaten
3 large bananas mashed
½ c. shredded coconut
½ c. mini chocolate chips
1 t. vanilla extract

Preheat oven to 350 degrees and grease a 9” x 5” baking pan. Combine flour, baking soda, salt, nutmeg, and cinnamon in a bowl. In the mixer, cream the butter with the brown sugar. Add the eggs, mashed bananas, coconut, chocolate chips, and vanilla. Once mixed well, add the banana mixture to the flour mixture. Use a spoon and stir the two mixtures together until you have a slightly thick batter. Pour the batter in the prepared baking pan and bake for 50-60 minutes, or until a fork comes out clean. Let bread sit for about 15 minutes before eating.

even i love the flavor of banana..made a choco-chip banana bread..was really yummy..ur bread looks so moist and soft...delicious jamie..
