2 c. all-purpose flour
1 t. baking soda
¼ t. salt
½ t. nutmeg
½ t. cinnamon
½ c. butter (room temperature)
¾ c. brown sugar
2 eggs beaten
3 large bananas mashed
½ c. shredded coconut
½ c. mini chocolate chips
1 t. vanilla extract
Preheat oven to 350 degrees and grease a 9” x 5” baking pan. Combine flour, baking soda, salt, nutmeg, and cinnamon in a bowl. In the mixer, cream the butter with the brown sugar. Add the eggs, mashed bananas, coconut, chocolate chips, and vanilla. Once mixed well, add the banana mixture to the flour mixture. Use a spoon and stir the two mixtures
together until you have a slightly thick batter. Pour the batter in the prepared baking pan and bake for 50-60 minutes, or until a fork comes out clean. Let bread sit for about 15 minutes before eating.
