The cake recipe I used was adapted from a muffin recipe I found on Deeba’s Passionate about Baking. If I am in the mood to bake, I always search through her blog for ideas. This muffin recipe looked especially good. Please click HERE to see her original recipe.
Banana Cake
1 c. flour
½ c. whole wheat flour
1 t. baking powder
½ t. baking soda
½ t. salt
½ t. cinnamon
¼ c. butter melted
2 bananas mashed
½ c. white sugar
2 egg yolks
1 t. vanilla extract
¼ c. walnuts chopped
¼ c. milk chocolate chips
¼ c. coconut shredded
Mix flours, baking powder, baking soda, salt and cinnamon together. With a mixer, blend melted butter, bananas, egg yolks, sugar and vanilla extract together. Once mixed, slowly add the flour mixture, the walnuts and the chocolate chips. Pour batter into a greased 9” x 9” baking pan and bake at 375 degree F for 25 minutes. With 5 minutes remaining, sprinkle coconut on the top.
This is SO good served warm with vanilla ice cream!

Mmm love banana bread... the recipe is quite cool... i have a very simple on my blog, but I really love to try different types. there always seems to be lots of bananas going bad in my fridge!

banana cake looks yummy...but on storing in fridge...bananas are not to be stored in fridge..when they do, they turn black much faster than in room temperature...
I don't even need Ice Cream!! ;D
