The other night, I decided to make paneer from scratch as I usually do, and instead of making a specific dish like Saag Paneer or Mutter Paneer, I just decided to make a super simple dish that has lots of peppers and onions and that’s about it! We were in such a hurry to eat that we didn’t even wait for the paneer to set into cubes. We prepared it with crumbled paneer and it was lovely! In fact, it really doesn’t even have a name. I don’t even know what to call it, other than Simple!
2 c. paneer crumbled
1 large onion diced
1 green bell pepper diced
3 green chilis split down middle
2 t. garlic minced
2 t. turmeric
2 t. chili powder
2 T. Maggi Hot and Sweet (or ketchup)
2 T. distilled vinegar
2 T. extra virgin olive oil
2 t. cumin seeds
salt to taste
Heat oil in a pot and add cumin seeds. Once the seeds sizzle, add garlic, onions, green peppers, and green chilis. Saute the veggies for about 5 minutes over medium heat. Add paneer and mix well. Add turmeric, chili powder, salt, Maggi Hot and Sweet and vinegar. Cook for 10 minutes, stirring occasionally. Taste to check the spices and serve with rice and yogurt!
