A Salad, Awards, and A Game of Tag!

Sometimes we get bored eating the same old salad every single night. We usually prepare a green leaf salad (usually Butter Lettuce) with cheese, mixed nuts, olives and dressing. Nothing special really. It’s pretty easy to make and it tastes pretty good. But night after night of eating the same thing can get pretty blah. So I decided to throw together some veggies and some balsamic vinegar to make a fresh summer salad to change things up!

Summer Salad

2 medium onions diced
2 medium tomatoes diced
1 large cucumber diced
½ c. balsamic vinegar
salt to taste

Mix all ingredients together and you have yourself one nice salad.

What was I doing ten years ago?
Well, ten years ago I was enjoying the summer before my senior year of high school. No doubt I was working a summer job, trying to earn money for my coffee/tea addiction. I (along with tons and tons of other people) felt I kept Starbuck’s profit margins sky high during the late 90’s. Since I played basketball for my high school varsity team, I was probably attending some basketball camps or going to open gyms to get ready for my last year.

What are five things on my to-do list for today (non-work related)?
1.
Fold the laundry
2.
Take my puppy Winston for a walk
3.
Go to Karate class tonight and try not to mess up
4.
Read another chapter in a super fascinating book I started ages ago but can’t seem to finish
5.
Go to bed at a reasonable time so I can wake up early and beat the heat for a walk outside

What are five snacks I enjoy?
1.
Doritos (doesn’t matter which kind)
2.
Chocolate Chips
3.
Honey Roasted Peanuts
4.
Pretzels filled with Peanut Butter
5.
Almonds

What things would I do if I were a billionaire?
Well, I would take a quarter of my billion and invest it. That’s a pretty responsible thing to do right? Then I would pay off all my school loans and any other debt that my husband and I have incurred. I would pay off my brother’s debt and pay off my parent’s mortgage. I would pay for the best health care available for my Aunt. I would give some money to a couple of charities, yet to be determined.

I would take an around the world cruise with my husband and see all the wonderful places I have always wanted to. I would start a school in India for my Mother-in-Law to run as she has always wanted to do that. My husband could get his pilots license like he has always wanted to and we can buy a tiny jet. I would buy first class airline tickets to India instead of economy. I might get a new car for myself and one for my husband and one for my Father-in-Law. I would hire a personal trainer to get me in shape. And I might do a little shoe shopping…
