More Quiche Please!

I have been very busy lately, and unfortunately, my blogging has taken a backseat to other important things going on. We are in the process of packing up our apartment to move to North Carolina at the end of the month. Needless to say, my ability to cook and post will be reduced during this time. After the big move, my husband and I are going to India for a month on vacation. After that, I am hoping things will return to normal. I will try to check in to your blogs frequently and leave comments, however, there might not be too much action on my Flavor Pantry for a while.

With that said, I am trying to use what I have in my refrigerator and my freezer to reduce the amount of food wasted when we move. I was able to throw together another great quiche that is 100% fat free (well, I am not sure what type of fat is in the pie crust as it was store bought, but I can’t imagine very much).

Broccoli Cheddar Quiche

4 egg (I used egg substitute)
1 c. broccoli florets cooked
1 medium onion diced
1 c. fat free milk
2 c. fat free cheddar cheese
2 T. flour
1 t. salt
1 t. black pepper
2 t. red chili flakes
1 9” unbaked pie crust

Preheat oven to 350 degrees and line a cookie sheet with foil. Place pie crust onto of the cookie sheet. Mix together flour and cheddar cheese and put in the pie crust. Next sauté the onions (I used a non-stick spray) and place on top of the cheese along with cooked broccoli. Mix together eggs, milk, salt, black pepper, and red chili flakes and pour into the pie crust. Bake for 50 minutes.

Love Quiche, looks great Jamie. Store bought Pie crust does have fat but what's a little fat compared tp all the goodness on top!:))
