Lime Rice
2 c. rice, cooked
1 tbsp oil
1 tsp chili flakes
1/2 tsp mustard seeds
2 tbsp peanuts
1/4 tsp turmeric
1 tsp ginger powder
1/2 tsp curry powder
2 tbsp lime juice
salt to taste
Mix lime juice and salt into the cooked rice. I waited for my rice to cool down a bit so I wouldn't smash up the cooked rice.
In a pan, heat oil over medium heat. Add chili flakes and mustard seeds. Wait until mustard seeds start to pop, then add peanuts, turmeric, ginger and curry powder. Stir to mix and immediately add rice. Stir to mix well over low heat. Make sure there is no white showing on the rice. Heat until rice is heated through, then serve.

I'm not a huge fan of lime but my daughter loves this rice. We make it at home at least once a week. But we usually use lemons instead of lime. Did you find a difference in the tastes of the lemon you had earlier and this one?
Any variety rice, we re ready to have it. Lemon is my favo! Good one :)
I love leamon rice, just the thought of eating them makes me drool drool.
Arundathi - The lime was a bit different as it was a little more sour than the lemon rice. But I am a big fan of both so it was a win win for me!

This is something we also like very much. Makes a change from plain rice.
