Tarragon Dijon Vinaigrette
My husband and I are trying to eat healthy. We are watching our sugar intake and our carbs, along with normal exercise. Some days are better than others. Every night we try to eat a salad. 1) Salads are normally good for you, 2) the lettuce contains a lot of water and will help fill you up before you get to your meal. Lately, we have been getting awfully bored with our salads, as we make them the same way every night. So last night, I grabbed my Salad Cookbook (Salads by Jane Price) and made a salad dressing. It was simple, healthy, and oh so good!
Tarragon Dijon Vinaigrette

1 shallot, finely diced
1 tbsp dijon mustard
3 tbsp tarragon infused vinegar
2/3 c. extra virgin olive oil
Whisk shallot, mustard and vinegar together. Slowly add the oil while whisking the dressing.
That's it! If you want to keep this dressing healthy, its important to use the extra virgin olive oil instead of another type of oil.
This particular salad had butter lettuce, reduced fat feta cheese, mixed nuts, and this lovely dressing. Enjoy!

Love Tarragon, Feta in salad makes it yummy! You could make Lentil salad, get lot of protein as well.
Love the dressing is simply quiet different!
