Slow Cooker Chicken Curry

I have realized that if I cook chicken in the slow cooker, it always comes out nice and tender. So instead of making chicken curry on the stove top, I decided to give the slow cooker a try. We are trying really hard to watch our calories and carbs. I can honestly say that I didn't use ANY oil in this dish, and it still turned out fantastic. It's just basic chicken curry, but when it turns out so tender, it just seems extra special.

Slow Cooker Chicken Curry

1 lb chicken

1 medium onion, sliced

3 cloves garlic, minced

1 tbsp ginger powder

1 cinnamon stick

1/2 tsp ground cumin

1 tsp red chili flakes

1 tsp turmeric

2 whole cloves

2 whole green cardamom

5 dried red chilies

3/4 c. vegetable broth

2 tbsp corn starch

2 tbsp cold water

salt to taste

In a greased slow cooker, mix
onion, garlic, ginger, cinnamon, cumin, chili flakes, turmeric, cloves, cardamom, and dried chilies. Place chicken pieces on top of the onion mixture in the slow cooker. Pour broth over chicken. Cover and cook on low for 6-7 hours.

After chicken is done, remove the chicken and set aside. Combine the
corn starch with the cold water and mix into the remaining juices in the slow cooker. Turn slow cooker on high and cook for 5 minutes. Stir occasionally. Add chicken back into the slow cooker and add salt to taste. Serve over rice with curd.

Slow cookers are Godsend for busy working women, isn't it? Come home to a aromatic and warm food, perfectly cooked and ready! Chicken looks creamy and moist, good job!:)
