A.W.E.D. Caribbean - Jamaican Jerk Zucchini

The most famous dish in all of Jamaica is something called Jamaican Jerk Chicken. Being that the A.W.E.D. Caribbean Event , started by DK of Chef In You, is a vegetarian event, it would not be prudent to make Jerk Chicken as an entry. So I thought why not take the Jerk seasoning blend used on the chicken and apply it to veggies! I had some zucchini in my refrigerator and thought I would give it a try. Here is what I did...

Jerk Seasoning


1 T. dried minced onions (or onion powder)

1 t. dried thyme

1 t. ground allspice

1 t. ground pepper

1/2 t. ground cinnamon

1/2 t. cayenne pepper (or more if you like it spicy!)

1 t. salt


Jamaican Jerk Zucchini



















2 zucchini, sliced round and halved

1 medium onion, sliced

2 T. Jerk Seasoning

salt & pepper to taste

1 T. extra virgin olive oil


Heat oil in pan. Add onions and zucchini and saute for 2 minutes, stirring frequently. Add Jerk Seasoning and continue to saute until zucchini is tender.

I recently tasted the jerk spicy chicken meatballs, it was sweet and spicy! The veggie version is a clever way!
