Pesto Pasta
Long time, no blogging! Hope all of you are doing great. I had a bit of an itch to cook today, so much so that I made lunch and dinner and cooked all day long! We have been trying our hand at growing some plants indoors and we planted Ghost Peppers and Basil. The Ghost Peppers seem to be growing taller and taller without producing any peppers! The Basil, however, has come along very nicely. I decided that I wanted to try and make a pesto pasta for lunch. It turned out great and here is what I did:
Pesto
2 c. basil
1/2 c. Parmesan cheese
1/2 c. pine nuts (I used peanuts, as I didn't have any pine nuts)
1/3 c. extra virgin olive oil
1 t. minced garlic
salt
Put all ingredients into a food processors and blend well. Serve over pasta and enjoy!

Welcome back! I would love to see the Ghost pepper when u get it :) Cooking from the backyard is always a pleasure!
